I am a mother of 4, My oldest child was diagnosed with Aspergers Syndrome when he was 7. After trying many things to help his difficulties we were at a point of turning to medication. I decided to try one last effort, and change his diet. I have seen significant improvements since doing this. And as a mother of an Child with aspergers I can tell you any improvement no matter how miniscule brings hope, and makes a difference. My major issue is that at times he chooses not to eat instead of eat the gluten free. Which I don't feel is an acceptable alternative. So I decided I had to figure out how to cook gluten free for the real world. Less substitutions and more things that are naturally gluten free. SO that is my mission to record all my steps to making us gluten free without hunger strikes.
